The products from the garden, along with the fruits and our extra virgin olive oil, are at the center of the culinary offerings we present to our guests every day, in a different, always new, way.
Casale Nostos is also an agricultural space, immersed in 3000 square meters of olive groves, citrus trees, and fruit trees.
We have tried to extend our architectural and building sustainability choices as much as possible to the agricultural practices that characterize the daily life of the farmhouse. The idea behind our agricultural practices is to wait for the products rather than speeding up their production. For this reason, we have embraced the idea of synergistic, organic, and participatory farming. We strive to make the most of the natural fertility of our soil and promote the natural biodiversity of our crops, eliminating the use of any synthetic non-natural products.
From our olive trees, we produce organic extra virgin olive oil every year, which is one of the main raw materials on which our Casale kitchen is based. A portion of our land is dedicated to the synergistic and biodynamic cultivation of vegetables and aromatic plants. Our garden is, for us, a true laboratory, the heart of our gastronomic experiments.
